No-Bake Energy Bites

I have always had a healthy appetite. My mother always said I would eat small amounts while growing up, but all day long. My father even warned my husband before we got married, to watch out if I had just woken up or was hungry. When I became pregnant, I was fortunate to not have morning sickness, as long as I ate something pretty much every hour. Then, after Big Guy joined us outside the womb, breastfeeding intensified my appetite even more so. Not only was I hungry every hour or two, but I could eat more amounts of food than ever before. It’s 16 months later, and it hasn’t slowed down.

When my girlfriend came over to visit after the birth, she brought me No-Bake Energy Bites. They became like crack cocaine to me. Not that I know what that is even like. I had to limit myself to only consuming four in a day. I decided to start making my own, since healthy snacks on such a ravenous appetite was paramount, and store-bought ones are pretty pricey. They are ridiculously easy to make and freaking delicious. They now are obviously a staple food in my refrigerator, and diet.

There are many variations to making these, so I’ll share with you my personal recipe.

No-Bake Energy Bites Recipe

Ingredients:

-1 cup oatmeal
-1 cup coconut flakes
-1/4 cup ground flaxseed
-1/4 cup wheat germ
-1/2 cup chocolate chips (or dried fruit)
-1/2 cup peanut butter (or any nut butter)
-1/3 cup honey (or maple syrup)
-1 tsp pure vanilla extract

Ingredients

Directions:

Mix all the dry ingredients in a bowl together. This consists of the oats, ground flaxseed, wheat germ, coconut flakes, and chocolate chips.Dry Ingredients

Next, mix the honey, peanut butter, and vanilla together. Sometimes I will add a tablespoon of chia seeds for an extra health boost. I unfortunately forgot during this photo session.

Add the wet ingredients to the dry ingredients, and mix it all together. I start mixing it with a spoon, but find using my hands gets a more even consistency. This also helps me know if I need to add more honey or peanut butter to make it stick together better. Depending on what kind of products you use can affect the amounts you need to use. Once it’s fully mixed together and you’re happy with the consistency, stick it in the fridge for at least 30 minutes. Then take it out and just start forming it into bite size balls. I dare you not to eat one while doing so! I typically get about 18-24 balls, depending on how big or small I make them, or if I make some mini ones for Big Guy to snack on. I store them in a container in the fridge, and they never last longer than a week in my home.No-Bake Energy Bites No-Bake Energy Bites
